Gingerbread Cheesecake Truffles

This year is coming to a close and it's time to reflect upon all that has happened.  I must say, 2013 was a crazy year, but overall a very satisfying one.  The hubby and I decided to move to a warmer state.  That meant selling our home first.  It took quite a few months, but we finally accomplished it.  Then I stopped working and became a stay-at-home mom.  While it drives me nutty a good amount of the time, it's nice to be more available for the kids and have more quality time together.  Next was the packing of the house and the big move to a new home, new state, and new life.  It was exciting, yet scary.  In the end, it was exactly what we needed.  I feel that as a family, we have been rejuvenated and it feels good.  Hopefully 2014 will treat us just as well.

It's crazy the amount of time we spend organizing, prepping, and stressing about Christmas.  I do enjoy most of it, but I also enjoy when it over and I can let out a sigh of relief.  The best part is seeing the look of amazement on my kids faces on Christmas morning when they see what Santa has left for them.  It makes me feel like a kid again.  It's then that I know all the craziness was worth it.  Now it's time to get ready for the new year.

Well, this is it.  The countdown is near the end.  Christmas is just around the corner.  I did get to finish my shopping and get everything wrapped on time.  Yay!  The kids are excited for the big day.  This year will be different, not celebrating it with family, but we do have a lot of great neighbors, so we won't be alone.  My daughter and I already baked our sugar cookies and gingerbread men.  Now we can spend Christmas Eve decorating them.  Hopefully next year my little guy will get in on the act. If you haven't made anything sweet for Christmas yet, I have a few ideas for you.

Reindeer Gingerbread Cookies

One of my new neighbors sent me a photo of reindeer cookies she found on Pinterest, using an upside down gingerbread man cookie.  So of course, I had to try it out.  I looked through a lot of images online and came up with a design that was a combination of several cookies I saw.  Baking the cookies was the easy part, it's the decorating that took forever because I am detail oriented and wanted things just right.  I like how they came out and my daughter told me they were cute.  It worth the effort.

We have been having some cold, wet weather here lately.  This kind of weather just makes me want to stay in bed.  But at least it's not as bad as the snow and ice that some folks are getting.  I surely don't miss that.  If bad weather keeps me in the house, I usually end up baking something.  I had some leftover pumpkin puree in the pantry that I wanted to use and I thought it would pair nicely with gingerbread.  I was right!

Eggnog Cheesecake Truffles

Yay! I finally started my Christmas shopping.  Hopefully I finish on time.  I had a busy weekend putting together a sampler of goodies for my neighbors' gift baskets.  These Eggnog Cheesecake Truffles were a part of the baskets.  I was really excited about how well they came out, in taste and visual appeal.  I would have kept them all to myself, but I thought it would be nicer to share in this season of giving.  And I would probably have had to buy some new pants come January.  I am so bad at eating just one.

Mini Peppermint Eggnog Donuts

I can't believe Christmas is creeping up on me.  I have so much to do still.  I haven't even started my shopping yet.  I really need to get it together and get it done.  In the meantime, I will have a donut.  I made these eggnog donuts last year with cinnamon and they were so moist and full of flavor.  I just had to make them again, but with a peppermint twist.

So what do you do when you have a bag of broken M&Ms?  You make fudge!  I was so excited to find Peppermint M&M's this year, but then my butter fingers acted up again and I dropped one of the bags.  So when I went to open it, I cried a little seeing my pretty M&Ms dented, chipped, and cracked.  I could have just eaten the bag and drowned my sorrows, but I may have ended up with peppermint overload.  I do love peppermint, but it needs to be mixed with other flavors.  The Peppermint Cheesecake Rice Krispie Treats I made before Thanksgiving are a perfect example of mixing up the flavors.  This time, I mixed it up with chocolate.  Peppermint and chocolate always go well together.

After my first Rice Krispie recipe failed, I went back to the pantry to see what else I could find to make Rice Krispie treats.  I went looking through all the goodies I found at World Market, Walmart, and Target.  I had some Jet-Puffed Peppermint Mallows, a box of cheesecake flavored Jell-O Pudding, a bag of Andes Peppermint Crunch Baking Chips, and a bottle of Peppermint Pigsy Dust.  Well, now that got the creative juices flowing.  I never had peppermint cheesecake before, but it does exist.  So why not try it as Rice Krispies.

 Today it's a beautiful, sunny day with a temperature of 80ºF.  Not the kind of weather I think about when we are only a few weeks away from Christmas.  Nonetheless, I am trying to put myself in the mood by making some gingerbread cookies.  Last year, I made some Chocolate Ginger Cookies that were the bomb, so this recipe is based off of those.  I only had Hershey's Special Dark Cocoa in the pantry, and I wanted to incorporate the Gingerbread M&M's I had found.  If you haven't found these M&Ms yet, check Walmart or Target.  The kids and I loved them.

Well, after two recipe fails in two weeks, it feels good when one works out. Ok, so it almost didn't, but I saved it. Thank goodness because it really is dreamy.  I am still on a butternut squash kick.  I just really like the taste of it.  I did try spaghetti squash for the first time this week, but I was not a fan and neither was the rest of the family.  I think I will stick to butternut squash.  I like seeing how many different flavors I could pair it with.  This time I pair it with Gingerbread Twix.  Yep, those are them crushed at the bottom of this dessert.  Have I intrigued you yet?

 I was watching the Pillsbury Bake-off Contest 2013 all weekend via Instagram.  There were a lot of my favorite bloggers in attendance.  The whole event looked a lot of fun from their media perspective, but I couldn't imagine how much pressure the contestants were feeling trying to win $1 million dollars.  That's just crazy.  I don't think I could perform under that kind of pressure.  But I would love to know how it feels to win.  Perhaps someday I will enter.  In the meantime, I was inspired to whip up these little treats for the family this weekend.

So I signed up for a neighborhood cookie exchange.  I gotta say, I am really liking this new neighborhood.  There's a monthly get together of mom's where I learned how to play Bunco.  At Halloween everyone was sending out Boo-Baskets.  Now we are exchanging cookies.  It's a very friendly atmosphere.  I am currently testing out new cookie recipes for the exchange.  Since I have been on a butternut squash trend, I thought I'd start there.  I wanted to see what other flavors I could mix with the squash.  I found some Biscoff, dark chocolate chips, and some quick oats in the pantry.  I am always up for something new.

Since my Maple Butternut Squash Bread was a success, I went out to buy more squash to see what else I could make.  I haven't made donuts in a while.  It seemed like a logical choice.  Who can resist a donut?  And we can pretend it's healthy because it has a vegetable in it.  But don't let the vegetable part scare you away.  This is still a sweet treat.  Don't tell anyone, but I think I may like this more that Krispy Kreme's pumpkin spice donut.

I hope everyone had a nice Halloween.  I know my kids had a blast.  It was very warm here, so that meant we didn't have to bundled up the kids under and over their costumes.  In fact they were in short and t-shirts.  And the houses in our new neighborhood are so much closer together that we were able to visit a lot more.  This year my little 3 year old son was really into it.  He carried his own bucket of candy and we even got him to say "Trick or Treat".  He actually lasted a lot longer than I expected.  When he got tired, he simply sat in the wagon and watched as I continued trick-or-treating with his sister.  Not one complaint.

I am taking a break from pumpkin recipes to bring you a different squash, butternut squash.  My typical method of cooking it is to slather it in maple syrup and bake it in the oven.  It is sooo tasty that way.  So I thought I'd incorporate that taste into a bread.  I've made Maple Zucchini Nut Bread and Maple Pumpkin Chocolate Chip Bread, so why not Maple Butternut Squash Bread. There really is not much I wouldn't add maple syrup to.

The fall weather down south is a lot different from the fall weather back home.  Here, I am still wearing my flip flops, capris, and short sleeves.  Back home I would have to be bundled up with long pants, socks, shoes, sweater, and a jacket.  I have not seen a lot of trees changing colors, but the fall decorations help me remember what season it is.  It is pumpkin season!  I have ideas floating in my head as to what else I can make with pumpkin puree.  I need to get them out.  Here is one of them.  This recipe is based off the Maple Pumpkin Rice Krispie Treats I made last year.

Maple Pumpkin M&M Cookies

OK people, I am back.  The last two months have been a whirlwind of activity. First came the packing, next was driving fifteen hours to our new location, then living in a hotel for two weeks while the new house was completed, and finally moving in and unpacking everything.  Now, my family and I have settled in, the kids are happy and have adjusted well to their new lives.  My daughter is doing well in school and has already made new friends.  My son is talking more.  Hopefully, that means we will be able to potty train soon.  I really want to get him into preschool, but he is really stubborn and only does things when he is good and ready.  As for me, I am enjoying my new kitchen.  I made these cookies in my new double oven.

Maple Banana Oatmeal Cookies

I may have packed most of my baking pans, but I kept my cookie sheets on the side.  I am currently trying to empty out my pantry before we move because our belongings are going into storage for a few weeks and we will be living out of a hotel for a week or so until our new house is completed.  So I am going to continue baking cookies and other goodies with the supplies I have left on hand and freeze them to take with us.  For these cookies, I used up my maple butter, raisins, dark chocolate chips, rolled oats and a ripe banana.  So much goodness packed into one cookie.

Spiced Dark Chocolate Hazelnut Cookies

My house is a real disaster zone right now.  I am up to my eyeballs in boxes, packing tape, and bubble wrap.  I have about three quarters of the house packed so far, and can't wait to be done.  In an effort to keep sane, I thought I would take a short break and make some cookies.  I was in the mood for something dark and chocolatey.  When Oh! Nuts sent me those dried pineapple bits and sliced guava I used for my last recipe, they had also sent a huge bag of hazelnuts.  Dark chocolate and hazelnuts sounded like a great match!

And the craziness continues.  We finally found a buyer for our house, that meant we had to go look for a new home.  Last weekend, my mom watched the kids as my husband and I drove fourteen hours down south to look at houses.  We must have looked at about thirty houses the first day and that was all in six hours.  After already owning two houses, we know what we want and what we don't.  Our realtor was awesome, he was patient and understanding.  We were supposed to spend two days looking at house, but since we saw most of our list the first day, we ended up finding "the one" that day. Now it's time to start packing!

Today I made some last minute treats for our 4th of July picnic tomorrow.  I love the Oreo and cream cheese combo, but this time I chose to use strawberry flavored cream cheese.  Strawberries and chocolate always go well together.  These are so easy to make and you can adapt them for any party.

Summer time means picnics and picnics mean potato salad!  Well, at least to me they do.  I love potato salad, but it has to be homemade.  The store bought ones are either too salty or have too much mayonnaise.  My potato salad has to be just right.  This is the one that my sister-in-law makes and so far it is my favorite.  She uses pickled beets to add flavor.  The pickled beets give it a sweet, but tangy flavor.

In an Instagram Minute

Just when I though May was busy, then came June.  I have not had much time to breathe yet.  Every weekend has been taken up by family events.  The most important one being my daughter's birthday.  So of course I was busy making treats for her.  Here is what I have been doing for those that don't follow my on Instagram. 

 First up were some treats for her party at school.  I made some cookie dough cupcake pops.  You can find the recipe and the how-to here.

Then I made some cupcakes fop her party at a miniature golf place with her friends and cousins.  I just used a Funfetti cake mix and made some buttercream frosting.  I used some green candy melt to make the leaves.  I drew the leaves on a wax paper and then peeled them off when the candy melt set.

Pink and green glittery sprinkles added the final touch. My daughter thought they were pretty, which is not bad considering she mostly likes boys stuff and her favorite color is blue. 

When I asked her what she wanted on her cake for the family party we were having after her friend's party, she said she wanted an outer space theme.  Yes, leave it to my daughter to make my life challenging.  She has a fascination with outer space, planets, constellations, and stars ever since Santa brought her the Children's Atlas of the Universe two years ago.

I didn't want to disappoint her, so I racked my brain for a way to make it work.  For the frosting, I bought a can of blue frosting and added some black frosting to it to make it darker.  I swirled on some extra black frosting to give the cake more dimension and brushed on some edible glitter dust for added effect.

For the planets, I used an Oreo and cream mixture to form the balls.  Then dipped them in candy melt and painted on them with gel food coloring.  They were not the best looking things, but not bad for someone who does not do cake decorating for a living. My daughter was pretty impressed and thrilled that she had planets on her cake.

Of course, when she saw me adding the little pearl balls for the stars, she asked me to make some constellations.  Seriously?  I just busted my hump making these planets.  Sheesh!  I did try to make some, but it wasn't really that easy.  Those little pearl candies are very slippery creatures.  I also couldn't find a way to make edible rings for the planets, so I had to resort to vellum paper from my scrapbooking stash.  Other than that everything was edible.

The inside was a just a white cake (from a box) that I filled with some homemade dulce de leche and strawberries.  I got lots of props on the cake the day of the party.  I was able to make it all the way through to the blowing out of the candles when out of nowhere, I got slammed with a stomach virus.  I had to quietly slip away from the party and spent the rest of the day in bed.  Not cool.

At least this time, the virus did not cause me to pass out face first and smash up my face.  But it did put a kink in my Father's Day plans.  I was not able to indulge in all the yummy food my mom made for brunch. 

Now I am almost back to my regular eating.  I am trying to keep it healthy.  But I am dying to get back to baking some yummy treats.  Next week is my last week of work, after that I will have more free time to do the things I love.  So stay tuned!

Well, we are still trying to sell our house.  That meant another open house this past weekend.  So I had a lot of cleaning to do, not much time for baking.  But I still needed some pick-me-up treats to keep me going.  Rice Krispies are always the easiest way to go.  And you can customize them to almost any flavor.  I have not yet run out of ideas of what to put in mine.  This week's flavor is Chocolate Caramel Pretzel.  I already had all the ingredients in the house, so it was a breeze to whip up and it made all my little taste testers happy.

Tequila Lime Coconut Fudge

So this happened the same day as my Lime Coconut Rice Krispie Treats with Tequila.  I figured while I had the bottle of tequila out, I'd make good use of it. I did take a few sips of it and hoowee that stuff was strong.  Don't worry, although you do taste the tequila in the finished product, it's balanced with the sweetness of white chocolate and citrus flavor of the limes.  There is no burning sensation as you eat it, only an "OMG this is delicious" moment.

Mini Maple Strawberry Chocolate Chip Scones

I ended up making these for Sunday morning brunch at my mom's on Mother's Day.  They were quick and easy to make, but the night I made them was a disaster.  I was finishing up my second batch of scones, so I had my husband put the kids in the tub, thinking I would be giving them a bath in a few minutes.  Wrong!  I went to get a glass of water from the fridge dispenser when I heard a noise and then looked down to the pool of water that was coming out from under the fridge.  Not good.

Maple Strawberry Banana Muffins

I kept promising my husband I would make him some banana muffins.  My first attempt was a total recipe fail.  The muffins tasted good, but were heavy like bricks.  Then my husband suggested I make strawberry banana muffins (he wanted to make sure he got credit for that idea), so I researched some recipes I could adapt.  I knew I wanted to add some maple and cinnamon flavor in there.  Hubby was quite pleased with the results.

Churro Puff Pastry

I am still looking for Spring.  We saw it peek it's head out a week or so ago, but not it has disappeared again.  Today was windy and chilly.  The skies were cloudy all day.  All I want it some warm weather so we can spend some time outside for a change.  I hate being trapped in the house.  But I supposed the only good thing to come out of this, is more baking for me.  Last week I made six jars of dulce de leche.  I had some recipe testing to do.  The first two recipes didn't go so well, but this one came out just right.

Trying to sell a house is very frustrating.  Especially if you really want to move.  We are still waiting for the people that want to buy our house to sell their place.  If they don't sell, they can't buy and if we don't sell, we can't buy.  So as much as we want to move, we are still not certain we will be able to.  We are playing the waiting game and I suck at it.  In the meantime, I am going to stuff my face with donuts.

Maple Bacon Rice Krispie Treats

So I missed the bandwagon when maple bacon treats came around.  Then I must have dozed off when chocolate bacon treats were making the rounds.  So I thought I'd make up for it by throwing it all together.  This is by far my craziest Rice Krispie treat yet.  It has cinnamon, maple syrup, bacon, chocolate and sea salt.  If you think all these don't belong together, then you will just have to make some for yourself to see that oh yeah baby, it does and you can't each just one.

Oatmeal Soup

The warm weather is finally upon us in these here parts, but the nights are still a little chilly.  So here's something to keep you warm.  Oatmeal soup.  Huh?  What?  Sounds weird?  Well, that is exactly what I thought when it was introduced to me.  My mother-in-law used to make it for her family.  Her version was just oatmeal and beef broth.  My husband says that it was his favorite soup growing up.  It did take me a while to get a liking for it.  After all, I was used to oatmeal as a breakfast food.  Creamy and sweet.

Maple Dumplings

Maple season is over in our parts and I have lots of maple syrup to use to make goodies.  This recipe is one that my mom used to make us all the time while growing up.  It's quick, easy, and it's full of maple syrup.  Of course, I called my mom for her recipe , but she was not very specific on measurements.  And she calls back later to say she forgot one ingredient.  Don't worry mom, I Googled it.
