Maple Butternut Squash Bread

Ingredients (1 loaf)
- 1 3/4 cups all purpose flour
- 1/2 cup light brown sugar
- 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground allspice
- 2 eggs, beaten
- 1/2 cup pure maple syrup
- 1/2 cup oil
- 1 cup butternut squash puree
- 1 teaspoon vanilla
- 1/2 cup quick oats
- 1 cup white chocolate chips
- 1/2 cup chopped walnuts
- 1/4 cup light brown sugar
- 2 tablespoons all purpose flour
- 2 tablespoons quick oats
- 2 tablespoons butter, melted
Preheat oven to 350º F.For the bread
In a stand mixer blend together the flour, sugar, baking powder, baking soda, salt and spice.
Then add eggs, maple syrup, oil and vanilla. Mix on low speed until everything in incorporated.
Scrape down the sides and bottom of the mixing bowl. Then add the butternut squash puree and oats. Mix on low speed for 2 minutes.
Add the white chocolate chips and walnuts. Mix until they are evenly distributed in the batter.
Pour the batter into a greased loaf pan.For the crumble
In a small bowl mix together the flour, sugar, and oats.
Then add the butter and mix with a fork until all crumbly.
Sprinkle the mixture evenly over the bread batter.
Place the loaf pan in the preheated oven and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Then cut yourself a slice and enjoy!
