Honey Carrot Scones

I can't believe Easter is just around the corner.  I still have a lot of prepping to do, but I took a break to make some scones.  These Honey Carrot Scones with a Mascarpone Glaze are perfect for an Easter brunch or any day for a coffee break.  They are sweetened with honey and are chock full of carrots, raisins, and pecans.  The mascarpone glaze is to die for and perfectly compliments the scones.  These were a winner in our household over the weekend.

Well, I survived my 41st birthday without incident.  I am looking forward to another great year in my forties.  The grey hairs keep increasing in numbers, but I am managing on keeping the wrinkles away for now.  I feel great and am healthier than I have been in a long time, so that's always a positive.  I thought I'd celebrate with some donuts.  I know they are not completely healthy, but these Mini Butter Rum Banana Donuts are worth a celebration.

Triple Irish Krispie Pie

Hey guys!  Are you all pumped up for St. Patrick's Day?  We are.  My husband and I are hosting a beer tasting night this weekend featuring my husband's Irish Stout.  So of course, I needed to make something special for our guests.  It started out as just Baileys Pecan Rice Krispie Treats, but soon became something else.  This Triple Irish Krispie Pie also has a pretzel crust , a Dark Chocolate Guinness Ganache, and it's topped with a Jameson Whiskey Chocolate Sauce, caramel, and a Baileys Whipped Mascarpone Frosting.  If that doesn't get your taste buds going, I don't know what will.

Dark Chocolate Guinness Banana Muffins



Last week was not a good week.  I was all excited about baking with Guinness again, but both recipes I was trying to develop failed and one I even tried twice.  I was very disappointed to say the least.  What a waste of good beer.  So I gave up and made muffins instead.  Of course, I did throw some Guinness in them, so they are not completely healthy.  But hey, we can't all be saints.  Some of us have to be sinners. Even more sinful, is the fact that I also made an insanely delicious whipped butter spread to go with these Dark Chocolate Guinness Banana Muffins that has a bit of Baileys Irish Cream in it.  Hey, if the Irish can put liquor in their coffee, I can put some in my muffins and butter.
